Experiments in the kitchen :-) !!!
Oil panini
500gr flour (white or half white and half wholemeal)
275ml water
10gr sugar
13gr salt
35ml olive oil
2 gr yeast
Method
Warm up the water and dissolve the yeast with a lit bit of water. Put it in the bread machine (I have the famous Thermomix!!!) the flour, the sugar and the dissolved yeast, mix all together, then add the remaining water and the salt, and knead all together (if you use Bimby: 3 min vel. "spiga" ), after few secs add the olive oil and knead until you have a smooth dough. Give it a shape of a ball put in a bowl slight oleate bowl. Leave it to rise for 7-8 hrs. (I usually leave it to rise all the night!!)
After this time take the dough, and spread it in a rectangular shape. Divide it in eight small rectangles. take each rectangle, roll it on itself, give it two or three rolls; flat it with a rolling pin and roll it again on the shorter side.
Put the panini on a baking tin and leave them to rise for other 45-50 mins.
Warm up the oven at 250°C and put in the lower part of the oven a pot filled with water.
Bake the panini at 180°C for 10 mins, then remove the pot and let them bake for other 10 mins.
Take out of the oven the panini and let them cool down.
